I've wanted to try these for a while, and was even tempted by one when mum and I went shopping in Birmingham and ended up buying some cupcakes in Selfridges, though I decided to stick with lemon instead, so when I found a recipe the other night, I decided it was about time that I just made some instead. Besides, I've been in a little baking mood lately :) They're so simple to make (and thats coming from me who can't bake to save my life haha). Hope you enjoy! Ingredients:
50g unsalted butter at room temperature
160g caster sugar
1 egg
1 teaspoon vanilla extract
3 tablespoons red food colouring
2 heaped tablespoons of cocoa powder
150g plain flour
125 ml milk
1/2 teaspoon lemon juice
1/2 teaspoon bicarbonate soda
1 1/2 teaspoons white wine vinegar
For the frosting:
150g cream cheese
50g unsalted butter, room temperature
100g icing sugar
1/2 teaspoon vanilla extract
juice of 1 lemon
Method:
1. Preheat the oven to 180C and place 12 cupcake cases in a muffin tin
2. Mix together the sugar and butter, then add the egg, vanilla extract and food colouring
3. In another bowl mix the flour and cocoa powder and in another, mix the milk and lemon, then fold half of the flour mix into the butter mix then half of the milk mixture, then repeat with the rest
4. In another small bowl mix the bicarbonate of soda and white wine vinegar together, then stir this into the cake mix
5. Divide the mixture into the 12 cupcake cases and bake for 20 mins or until cooked through then leave on a wire rack to cool
6. While the cakes are cooling, mix all of the ingredients for the frosting together then spoon it on the top.
